White Choc Peppermint Cheesecake
Chocolate always goes well with peppermint and Mummy happened to like the combination a lot so thought of combining them into a cheesecake recipe. Here goes:
Base:
2 rolls of oreo cookies
60g melted butter
Cheese:
550g cream cheese
100g sugar
1 tsp peppermint essence
2 rolls of clorets, crushed
some white chocolate shreds
3 tsp gelatine dissolved in 50ml hot water
Method:
- Crush oreo cookies in ziplog bag.
- Melt butter and mix with cookies.
- Press into a springform tin. Freeze for 20mins.
- Cream the cheese and sugar till its creamy.
- Add peppermint essence and gelatine solution, continue blending.
- Fold in white chocolate and crushed clorets bits.
- Pour mixture into springform tin and chill overnight.
